Fish Cakes

Fish cakes are a great way of getting fish into your diet👌🏽. I love fish because eating fish is an important source of omega 3 fatty acids. These essential nutrients keep our heart and brain healthy.

THE KINGDOM MYSTERY OF FISH

The Hebrew root word translated as 'fish' is 'dagah' (דָּגָה) and it means to multiply, increase.

Mathew 4:19 NIV Come, follow me, Jesus said, "and I will send you out to fish for people.

🐟 God’s desire for multiplication should fuel our own. God has been about multiplication right from the beginning. Every individual Christian should understand God’s desire for multiplication and seek to reach those around them with the gospel.

🐟 When Christ calls us by His grace, we ought not only to remember what we are, but we ought also to think of what He can make us. It is, "Follow me, and I will make you." We should repent of what we have been but rejoice in what we may be. It is not "Follow me, because of what you are already." It is not "Follow me, because you may make something of yourselves;" but "Follow me, because of what I will make you.”

🐟 We are like the fish, making sin to be our element. Then the good Lord comes, and with the gospel net he takes us, and he delivers us from the life and love of sin. But he has not wrought for us all that he can do, nor all that we should wish him to do when he has done this. It is another and a higher miracle to make us who were fish to become fishermen...to make the saved ones savers...to make the convert into a converter...the receiver of the gospel into an imparter of that same gospel to other people.

INGREDIENTS 

🐠🐠🐠🐠🐠🐠🐠🐠🐠🐠

1 tin tuna fish in spring water

250g potatoes, peeled & cubed

1 carrot, peeled & finely

2 handfuls of frozen peas

1 tsp finely grated lemon zest

1 egg, beaten

Plain flour

Breadcrumbs

1 tbsp olive oil

 

INSTRUCTIONS

Preheat the oven to 190°C/375°F/Gas Mark 5.

🐠Cook your potatoes and carrots in boiling water until soft. Drain, mash and set aside.

🐠Cook your frozen peas in boiling water for 4 minutes, drain, reserving a little of the water and blitz with a hand blender. Add to the potatoes.

🐠Flake in the tuna and lemon zest and stir well to combine. Leave in the fridge to cool completely.

🐠Arrange 3 bowls, each with the egg, flour and breadcrumbs ready to coat the fish cakes.

🐠Take a tablespoon, scoop some of the fish cake mixture onto it and shape into a small patty. Coat in flour, shaking off any excess, before dipping in egg and then breadcrumbs. Lay on a non-stick baking tray.

🐠Repeat with all of your mixture and then brush the top of each fishcake with a little olive oil.

🐠Bake in the oven for 25-30 minutes until the fishcakes are crunchy and golden. Leave to cool before serving.
